I do a lot of cooking for big groups and I would ask this, are you building tacos or will it be a taco station to build their own? That estimator looks about right for 6 oz per person but if it's build your own, I would get 40#. Cook your rice in the oven for sure. I think they may be heavy on condiments?

Since, ya know, you're too lazy to Google "Taco Calculator". Haha, only joking.I can't stop laughing at the fact there's a taco calculator. I never would have guessed.
Also if this is for a graduation party... I'd probably go 1.5x what the calc says since there'll be 18 year old men eating it. I know personally I go to town on tacos, as you could probably tell by my avatar! Hope y'all enjoy.

You can make your protein go way further by adding other items to your taco meat. Potatoes, tomato filets, oatmeal (a hanging offense in my opinion) are ways some of the big chains make the proteins go farther. Just adding regular salsa adds flavor and makes the proteins yield way higher. 25 lbs of 80/20 will definitely cover the 100 people.
Remember the most important step in all of this. Tortilla chips and salsa fill people and plates up. There is as reason Mexican food establishments give them away to every table.
