Looks like a great recipe, but I think he spent more on seasonings than crawfish.

              Simple version.

If you get them from HEB they are already cleaned. Rinse em off and you are good to go.

              Use more seasoning than recommended.

Do not overcook. About 5 minutes after you add them is time to take them out. Test one.

The longer they soak the better and hotter they will be. Stop the cooking process and let em soak.

Corn & potatoes will soak up lots more seasoning than the crawfish.

I always start my pot with about 50% of the seasoning and cook all the sides. When done throw them into a separate cooler, add the rest of the seasoning to your pot and start the crawfish.

And don’t over cook the crawfish!

Lol same. I was at a boil Saturday where not only were people peeling the entire tail and leaving the heads untouched, but a lot of people were using gloves.

That seasoned water will probably do 100 plus pounds of crawfish, I think our cost for the seasoned water figures to be about .20 cents a pound, so around 20.00 dollars for 3 bags of bugs.

Here is a simple overview. This is a steam and slurry method, one that I and many others prefer. They are only using a few inches of water in the cooking pot. It's a long video but worth the watch.

I do the clean water boil as well. I get a pot boiling, add about half of the expected seasonings to it, and add the potatoes, onion and garlic. Let that boil 5-10 minutes depending on the size of the potatoes, add the corn and mushrooms and cook just a couple minutes, then dump all that into the soak cooler. Start another pot of clean water boiling. About the time that pot comes to boil, scoop the veggies out of the slurry and add the rest of your seasonings. Check the temperature, if it's still too hot, add ice as necessary. Throw the bugs in the clean water, return to a boil, dump into slurry, drink a couple barley pops and get busy.

I've prolly eaten a ton of bugs in my day....never quite understood the " sucking the heads" thing......at least not for a man anyway.

My wife uses gloves cause she don't like digging crap out of her nails.
