Made me insist on changing from a ribeye to the ole classic bacon wrapped blackstrap for dinner tonight. I was smoking some sausage I stuffed earlier today so threw these babies on after the sausage was done. Got some hickory smoke on them for a half hour or so then let that air flow in and finished then up somewhere between medium rare and medium. Wife don’t eat venison so she got a steak. If I have a last meal choice, I hope this is on the menu; simple and classic.
