          It's a commonly referred to method for making ribs.

          The first number is the number of hours the ribs smoke on the pit.

          The second number is the number of hours the ribs are wrapped (either in foil or butcher paper) and on the pit.

          The third number is the number of hours the ribs are unwrapped and placed back on the grill to firm them up (and sauce them if you so choose).

          So, use the 2-2-1 method if you like. If the ribs are too tender, try 2-1-1. BBQ is all about trying things and figuring out what works for you.
