Need cooking help

I was informed I needed to come up with a recipie for crawfish etouffee to cook at the station tomorrow night. Never cooked it before and I’ll never hear the end of it if I don’t come up with something good. I figured someone would have a pretty jam up recipe that could feed 8 firefighters. Use spam instead of crawfish, they won't know the difference. It will be talked about for years.

Someone brought us a cooler full of already boiled crawfish to eat last shift. That’s where this mess all started. Took me like 2 hours to peal all the remaining ones after everyone got done eating.
