Ideally you’d dry it nice and slow in a cool 40-50 degree room with low humidity. Unfortunately living in corpus by the coast it’s hard to do. If I get lucky I get a cool week after a front and air dry my sausage in our spare bedroom with fans blowing to circulate the air. I hang mine on long rods stretched in between a bed and a desk. We usually make 50-75lbs a year, and the room smells awesome for about a month afterwards!
