    Baby back ribs

    What’s your routine on the smoker pit? To keep them “on the bone” and not fall off the bone. Mine always tend to fall off the bone, but would like to keep them as finger foods and not need a fork.

        2-2-1 on baby backs, they are usually thick enough they don't fall apart.

          225 deg. 2 hours open smoke, 1 hour wrapped, 1 hour open smoke with glaze on to caramelize and they still fall off the bone. Guess I’ll try not wrapping them next time.

            Yes, you want them bite off the bone. Fall off the bone is roast🤮

              I just cook them about 3 hours at 250, no wrap, they turn out great.

                I pull the membrane off and cut into individual ribs. I then grill them for about an hour and put whatever sauce I want on them. For me they are much better this way and they get bark all the way around. They are also not fall off the bone, I do not like fall off the bone mushy ribs

                    If you dont pull the membrane off the meat stays on the bone better and dont wrap them.

                      Try butcher paper instead of foil, just really watch your ribs when they are wrapped regardless of what method you use.

                        1 hour max on the smoke at 225 or less, then wrap and finish in the oven works pretty good too. If you want to put a sauce on them to finish, put it on and bake in the oven open, no wrap... 45 minutes usually does the trick... Temp no higher than 325 preheated oven.
