Pit hot with Oak or Hickory coals.
Steak of choice, salt and pepper with a coating of honey, let steak sit till coals are hot.
Throw on pit over the hottest part of coals, 5 minutes or so.
Flip with tongs, not fork, let sit for another 5 minutes, put a coating of honey, when blood pools up, flip again for 1 minute.
Serve on plate with seared/roasted Asparagus coated with Olive oil.
Let steak set for a couple of minutes...Enjoy!

I mean it smokes, but not kitchen full of smoke. I usually set my burner on 7.5 out of 10 heat wise and let the pan heat up for 2-3 minutes and then cook 1” steaks about 3 minutes per side. 1 flip then to cutting board to rest.
