    Jureks place is hard to beat. I buy all my seasoning from him and do the processing, smoking and packaging myself now. But if you were only out $95... that might be justifiable for not getting all the equipment out and cleaning... Phone call at lunch!!!

      I do mine with only 7% beef fat and it is plenty moist. One of the best though is equal parts axis and young wild pig. either is great.

        I use nothing or a little beef fat. Tried the bacon ends once and didn't care for it.
