We didn't waste money on Shiner though. We used Keystone and Natty because that's what we had! Same reason we used deer meat instead of beef.

When I'm in a hurry I use two packs of Williams chili mix, 2 lb of meat, one big onion, two bell peppers, two Serrano's and one jalapeno. Tomato sauce....not sure how much. Little bit of water or beer and let it rip. Always tasty. Usually add salt pepper and garlic powder while I'm Browning the meat.

Make it as bland as you can if it is a church cook off and if it by popular vote you will probably win

On the flip side you can make it brutally hot and have them all sweating like a whore in church

They will definitely have new rules next year if you do the latter

I like a mix of pinto and black beans.

If you want the bean taste and thick chili but don't want the judges who hate beans in chili to find the beans use refried beans.
