              I smoked tuna yesterday - chop up and mix mayo, chopped onion-celery-cilantro-pickle = smoked tuna fish sandwiches! Another twist - Patty melt sandwiches with smoked tuna and cheese - using a Panini press.

              Crumble smoked tuna into a salad for a different kick

              Vacuum sealed a load

              Make a big bowl of Poke

              Canned a load with chopped onion (red,white and green), cilantro, garlic and jalapeno. Added a shot of jalapeno juice into each jar for liquid. Used small jars so lunches and crackers are perfect sized for a simple fast meal.

              Can more tomorrow evening with a shot of liquid smoke and the same stuff mixed in today's canning run

                Busy processing weekend but, eating tuna as I work is nice.

                  Ran a second round of canning tonight.


                  Added liquid smoke - Hickory to each jar with garlic, jalapeno, 3 onion types and cilantro. Smells wonderful as the jars pop on the cool down.

                  Gave a lot to family and co-workers. All vacuum sealed along with a pile of Poke to family in Kerrville. Been eating tuna for a week now - finally have everything processed, canned and or vacuum sealed for later.

                  Haven't yet touched the Grouper, Barrelfish, Mahi and or Vermillion Snapper. Scamp Grouper is high on my must cook list in the next couple of days.

                          So we have had tuna a dozen times since getting back. But tonight we did our most common method and seared steaks. They were super fishy. So fishy tasting that we tossed it. Anyone else run into this? Did I just find a bad piece? All of our tuna is very well vacuum packed.

                            I have no idea I don freeze it really. Send Atthewall a message and ask him. I eat as much raw as I can and give a bunch away. I just like catching fish. trying to go in about a month.

                                Possible but not likely. We were good about keeping covered indirectly with ice but not sitting in water.

                                Hopefully this is an isolated piece!
