Summer Sausage Question

How long does summer sausage usually last when refridgerated? I had a deer processed in Kerville and it was shipped to me on January 7th. One pack is still in the fridge.

Not sure on how they processed it but it should be fully cooked and cured. Should be good for a long time but not sure on the process in which it was made.

Call the processor.

When you go to the grocery store, the Hillshire farms stuff is just sitting out un-refrigerated. At least this time of year, you typically don't have to worry about high temps during shipping.
