    Deer backstrap on the grill

    Tomorrow's lunch is deer backstrap

Right now its got Emerald's essence seasoning and its marinating in amber beer.

    Its going on the grill.

What temp and how long should I grill it?

I'm going a nice salad and corn on the cob with it on the side.

And yes, there will be red wine involved.

Hot as you can get it and about 4 minutes per side. Each one will vary.

This. Except I do 2 minutes, 3 minutes tops per side. I just want it seared on the outside

As hot as you can get it! I use a gas grill that has a sear burner and get to 600-700 degrees. How long depends on how big of a piece, but no more than 3-4 minutes per side.

This was about 2 1/2 minutes per side, and was perfect! You don’t need any marinade! All you need is a little seasoned salt and a lot of Lowry’s Seasoned Pepper!!!!

This will make you cuss every time you go and waste money at a steak house!!

I agree on the wasting money at a steak house. I grilled Axis back strap this week that melted with every bite!

You could have saved that beer. The backstrap doesn't need marinade. Like others said, sear it hot cook it rare and enjoy. 2 1/2 minutes per side is about as long as I would cook them on a whitetail backstrap. All depends on the thickness though. You just want a good sear and warm in the middle.

            Bisch's pic looks perfect IMO

No, it is not! It’s just red. My wife was an at least medium done steak person mist of her life. I told her I would not cook the deer backstrap that much because it would just make it tough and not taste as good. She would slap me nowadays for cooking it to medium !!!!
