    Water buffalo meat processing?

I finally got the water buffalo hunt scheduled. But now I’m trying to find a way to get all the meat processed. I was thinking hamburger out if the front quarters and steaks out of the rear quarters.

How have you had water buffalo processed?

Process it like you would a beef. That's how I processed my bison

      This^^^.
I've never processed water buffalo, but I have done cattle and Elk. They are pretty much the same cuts of meat.

I guess this water buffalo hunt is in Texas, and not Africa? Either way good luck.

I'd suggest you test out some of what you want to make steaks out of and check the tenderness/tuffness of those pieces of meat before having them cut up. You might end up with more ground meat.

The taste of the water buffalo meat is very similar to beef but it is considered a healthier alternative because buffalo meat contains less fat and cholesterol, and more protein than beef

Wow, according to that article, you’ll get taller and better looking after eating Tender Buff!

I shot a water buffalo heffer once and the backstrap was too tough to eat. I would taste some backstrap before processing and if it is tough, get the whole thing ground up.

Pm JJ-Matt. His group shot two this weekend. He should be able to give you some suggestions on good uses for the meat.
