I would ditch all the Cozumels and Cancun if it were me. We started going to the Dominican Republic (Punta Cana) folks are much more pleasant and cost round trip with airfare all inclusive resort was 1k per person. Was 3 nights 4 days I think.

Seconded. I've been to many places on the Yucatan Peninsula and Iberostar is a pretty good budget resort for the family.
