I'll pull them out 2 day's before I plan on cooking so I can let them sit a full day in the fridge.. then season the next morning and then cook the following. Has always worked for me

I usually leave them in the fridge at least 3 days to thaw. It doesn't hurt them to leave longer. If they are in the vacuum sealed bags it just wet ages them.
