First time sausage making.

This is our first attempt at sausage making. Started with 12 lbs.
Mixed 3 lbs. of venison to 1lbs. Of pork bobo.
Used Blakes seasoning, Cajun, Breakfast, and Italian. Thanks Blake.
Cant wait to fire up the pellet grill and sample the goods.

Gonna be a little dryer with that ratio but I bet its good..

25% pork

It will be fine. I mix less than that(18-20%) for summer sausage. Usually about 25% for fresh sausage, doctors orders
Most recipes obviously call for a higher fat content but it will be good and you can adjust to your liking on future endeavors.

If it's dryer than you would like it to be then try a 50/50 mix of venison and pork next time. Looks good.

My first several times were less than desirable. I think they were too dry for the most part. They needed more pork fat.
