I've shot both 3 and 4 blade fixed broadheads as well as some of the mechanicals. I have decided to stick with the fixed blades but was wondering about some of the pluses and minuses of 3 vs. 4 blade.

This is one of those Ford vs Chevy questions honestly.
Any broadhead you pick should have the following qualities:
1) It should shoot straight for YOU, out of YOUR rig
2) It should be so sharp you're scared to handle it
3) It should be tough enough to dismiss light bones
I've shot and killed animals with 3 blade and 4 blade heads. Shot placement and angle affect so much more than cutting width and blades. In general with sufficient kinetic energy 4 blades will create more bleeding faster than 3. However on my last trip my sika left a firehose blood trail for a whole 30 yards before piling up... the broadhead? a 7/8" wide 3 blade Sonic. Same trip I literally had a blood trail 3 feet wide on a doe for about 50 yards... the broadhead? Muzzy MX-4. Find what shoots well for you and what you are comfortable with. My "favorites" are listed below.
4 Blades:
Muzzy 100gr 4 blade
Muzzy 100gr MX4
Slick Trick 100gr
3 Blades:
NAP Thunderhead 100gr
AB Sonic 100gr
AB Sonic Pro 100gr
