Next time you get a biggun that's fat like that, If you'll cut the skin into strips about 4" wide all the way around and skin her head up just like you did, she will come out looking like this... Just peel her down like a banana going down evenly all the way round a little at a time.
A woods hog fat on acorns or other grain, even grass/roots and such they are usually excellent table fare... Some of the worst tasting pork I've even eaten has come from hogs I've killed in South Texas, and also coastal pigs... The old sayin' "You are what you eat" applies to pigs too I guess.
