          Seriously though...drain the grease off of the meat before adding the water and seasoning.

            I do not....fat is flavor..

            I use a little less beer or water so I can keep it in there.

              I usually make mine with deer so very little fat to drain off. Made some with 80/20 beef and it had lots of fat, I didn’t drain it and it was awesome. Unhealthy I’m sure but I liked the fat one top, cornbread soaked it up.

                  Unless you're using untrimmed brisket, or on a low fat diet, DO NOT DRAIN MEAT!!!! I have family members who believe draining grease includes draining the meat juices as well, and it's terrible...if you want to separate, then use a grease strainer...BUT NEVER EVER drain off all liquid unless you want the most dry, tasteless meat EVER!!!!!
