I do not hang deer. I skin and put directly on ice for 4-5 days draining the water regularly.

I let my deer hang as long as I can if the temps don't get above 45 or so (up to two weeks). If it's too warm, I just debone it and age it in the refrigerator for ten days. Don't let the meat freeze or it stops the aging process. The only meat I don't age is that which I'm going to be grinding.

Seems like it's never cold enough outside to let it hang. Just quarter it up and put in cooler on ice.

Me too! I just don't think we usually have the kind of prolonged cold weather in Texas that is takes to be able to age venison except in a cooler.

I wish it was cold enough to hang but I usually just put it on ice for a week or two even draining the water daily!

X3- and thats the way I was taught to do it..... I have never heard of aging the meat till I started hanging out on these web sites... I was taught to leave the meat on ice and continue to drain till the water is clear, that was supposed to take all the bad elements out of the meat...

A meat cooler is 28-32 degrees.
