Do we have any professional meat processors??

What is the process for bringing wild game from CO to TX for processing? Deboned, vac sealed.

I asked for some suggestion on sausage up here and the people said you mean breakfast sausage? Just said no and changed the conversation.

I am coming to Houston for Christmas and would love to drop off and pick up on my way back. The panhandle may allow for the most time overall. Tall order I know at that time of year.

    Any insight?

Have brought meat from Wyoming for processing before. Have your carcass tag. Fischer's in Muenster, Tx does great sausage. Give them a call and ask.
Have it boned out to save time and make prior arrangements to know if they want it frozen or not. We have ours cut into grindable size chunks and frozen when dropped off

I'm not a professional, but I am experienced. I can do roasts, steaks, pan sausage, and link sausage. How much are we talking about?

I've got one shelf in the deep freezer that's hamburger/ chili grind, one shelf that's roast and steaks. It's a fair amount, I don't have an exact account. I'd like to get some roasts sliced thin for jerky.

I usually get some jalap/ cheese made and spicy and normal polish.
