Put about 3/4 seasonings and spices in at beginning. Add the rest last 20-30 minutes. Expecially if you want it hot. The longer you cook peppers the milder they become. So put them in towards the last.
Also don't get to far away from chilli Too many people get too wired and it turns into a 2 gallon pot of uneatable $&@%. Examples I've seen:dill seed, Hershey bar,Carmel,rosemary
