We wade a lot at night in the summer. The lights really help with that. We leave them on so we can see the boat. Never had a game warden say anything. Not a lot of people on the water at night in Port Mansfield though.
My buddy runs green "bling" LED's all over his airboat. Been checked many many times and never had the GW say anything about it.
I have a feeling it's going to depend on the GW. Most of the ones I've run into in TX have been nice and professional. It's when you run into one that isn't - then you will have issues.

We have lights on bay boat that switch from white to blue. Blue is way easier on the eyes! I'll see if I can't find the brand. Bought off of Amazon if I remember correctly.
I have some small blue livewell lights on the deck that do a great job of lighting it up with out blinding you. Also have a bling light at the foot well on the center console that is a small blue strip led. I can take pics when it quits raining.
I have 4 of the small deck lights on a rocker switch. Have not seen a dimmer switch, but the lights I have are not bright enough to need a dimmer.

The strip light is too bright to drive with on at nights, but the small round ones are not too bad. Also added small round ones in white in the hatches.
