Fish Shack in Plano, lot of LEOs eat there. Also happens to be close to a meat processor, Ye Ole Butcher Shop.

Drive a little further to Mexia and stop by Farm House. Jim's Crispy Fried Chicken also at Mexia has good fried catfish too.
