          I just recently started doing them hanging. Gut after skinning. I did both head up and head down.

              Initial incision in the nape of the neck (pig was belly-down), following the spine down to the tail - opened him up from there. Cut out straps and then used loppers to cut each rib and just yanked each rack out. I might have had to cut a little connective tissue, i dont remember, but the guts just stayed put as the pig was only opened up along the spine.

                Depends...

                Doe Fawns, gut on tailgate, skin in halves head up.

                Does, gutless method or above.

                Bucks we are almost always caping out so upside down after gutting on tailgate.

                Pigs just depends on size of animal. Did 6 shoats monday with the Doe fawn method... takes a lot longer to do a 25 pound piglet than a 40lb fawn... pretty funny.

                  Hang by Legs, skin, gut, quarter and then I get every piece of meat possible. You can get 10+ pounds of sausage/ chili meat if you put in a little effort trimming ribs, flank, brisket etc.
