    Turkey Jerky

    Who all makes or eats turkey jerky? I've never had it, never made it and just wondering.

    Folks at work wanted me to bring wild turkey to work. And I was trying to think how I could cook up some breast that would keep. My favorite way is cajun fried. That just didn't sound like it would be good after a few hours.

    Turkey is dang good. I have never made it so I cant say how to do it tho.

    My favorite way to cook wild turkey is a good turkey stew. Not exactly what theyre asking for, but its dang good.

      That's about all I do with wild birds these days. Just not enough fat on em to make them work cooking whole.

      I will strip the breast out and either batter and fry them our make jerky out of it.

      For jerky it's simply just seasoning with salt/pepper/ cure/garlic/ red pepper flakes. Then I put them in the smoke house on some screens and smoke them about 8 hours or until just about dry with mesquite. It's some very good stuff and addicting.

          its the only thing I do with wild turkey any more. It is my wife's favorite jerkey that I make. In fact, I have made chicken jerkey during the times that I don't have turkey and it is almost as good. The chicken has now become the second favorite around here knocking venison down to third.

            Do you slice the turkey breast by hand or with a meat and if so how thick?

              This is what I'm going to try. Got 2 breasts in the freezer from the fall. Figure I'll use the same marinade as jerky. Or might try one I got off the net yesterday.

                  I partially freeze the breast pieces and then slice them about 1/4" or just slightly thicker. It dries up into nothing. If sliced to thin when dried it's like paper and will more like a chip.
