Yoder smoker ?

    I have never cooked a flat only brisket with no point. Post how it turns out, I am interested to know.

      I did sign up for the emails, thanks. The flat was just a little dry as it was a pre trimmed one and was pretty lean (all I could find). Other than that it was pretty good. Couldn't believe the smoke ring I got on the yoder.

            I went ahead and picked mine up at FedEx. That sucker is heavy duty! When I asked them why it was going to sit at the dock for 4 days prior to delivery they said "they didn't pay for express delivery so we can't deliver it any sooner than Tuesday!" I don't understand that logic! I burned it in and cooked up some boudin. I can't wait to do a full cook on it.

              Did you get the direct grill grates? Really interested in how well they work.

                Yes I got 3 of them (covers half of the bottom level) and the special spatula for use on them. I haven't removed the diffuser plate to sear with them but it worked like a regular grill with them in. I couldn't imagine how it wouldn't be just one hot spot above the burn pot but it isn't. It was hot enough to make grill marks on the budin at the middle of the grill and I never turned it above 350...I don't know how it works but it does. With the diffuser plate removed it is supposed to get the grill surface up above 700 degrees. The diffuser plate with the trap door in it would probably be really handy but I am not ready to spring for a $200 option at this point! although I would like to get a Tappecue.

                  Awesome. I'm fixing to spring for the grill plates. I want the diffuser with the door too. Probably wait a few months. I can see myself using the smoker every weekend, I love this song thing.
