When I worked there, I saw the widest whitetail I ever saw next to Montana in the Breaks. Mule deer there too, but I never saw any great big ones. The eastern part of ND is farm country, the western part is ranch country. Some of the best folks I ever met lived in the rural parts, the ones in town not so much, at least the merchants.
In the winter, it will be cold. You already know this, but I'm talking dangerously cold. As in, if you have some kind of car trouble, get stranded, or such. I always carried a sleeping bag in my Bronco, a very large candle, a couple Texas sized Hershey bars, and a cup to melt snow in. We all did this, it was company issued. Some might laugh, but if you have to spend the night in 30/50 below temps, you won't be laughing long.
I moved back to Texas because I had four kids here, if not for them, I would have stayed there.
