Normally I use redfish for this but the crappie was pretty good. I used bigger filets and they held together ok.
Make a roux from 1 stick of butter & gumbo filet
Add in minced garlic, one chopped onion and celery and cook on low. Add 2 cups of 1/2 & 1/2 and simmer.
Pour into crock pot and mix in the following.
One can of tomato sauce
One can of corn drained.
Bay leaf
Chopped jalapeño or bell pepper
One can of cream of celery or mushroom soup
Cube red potatoes and add to crock pot.
Cook 2-3 hrs on high and turn to low
Add filets and cook 1 hr.
I add salt pepper and Cajun seasoning to taste in croc pot before adding the fish.
Going to try if the weather cooperates. Me and the wife fished a little today and caught 8 big ones. Should have had more but due to the wind we couldn’t fish where I would have liked to.
Sandbass wouldn't stay off my hook yesterday. Only 6 keeper crappie. Threw back some dinks. And dink sandies. But did catch 20 keeper sandies before I had to go.
The fish are biting, and there's hogs to be kilt. Gotta go!
