We went a few years ago with the in laws. We went on a tour and traveled from city to city looking at different things, mainly churches. It was nice but I think our particular tour kinda ruined it for us. I'll try and find our itinerary.
I went in the late 90's during college so my info will be a little out dated. I stayed in Salamanca and spent time in Madrid, Sevilla, and Pamplona as well, and a long weekend on Portugal. Did not get to Barcelona and have always heard it's a must-see place. Do you have an idea of where you want to go? I really don't think you can go wrong with any of the major cities. If I had 7-10 days I would plan it around the Running of the Bulls--go into Madrid, spend a day or two, head south to the coastal areas (Sevilla area), then head to Barcelona, Pamplona for the Running of the Bulls, then back to Madrid. Or vice versa, Pampona-Barcelona-Sevilla-Madrid. Either way you're hitting several hot spots.
It's a beautiful country and as a whole the people are friendly. The southern part is more heavily Muslim influenced, just FYI. At least it was when I was there and that was before 9/11. It may be even worse now.

Barcelona, seaside resort town , lots of art restaurants, take the gondola to the fort / walk back
Pampalona skip running of the bulls unless you like martie gra , hotel is impossible to get
Google festivals in Spain
Spain is huge and so much to do , buy a train pass and metro pass
And have fun
Been there, lots to see. If you rent a car get all the insurance you can. Make sure your U.S. coverage will cover if Spanish doesn't. Make sure to see Gibraltar!
