If either or both are sows, skin 'em like a deer. Don't mess with that gland on their back. It will come off with the hide.. Keep the hide/hair off the meat. Wash your hand/knife or switch knives and gloves before you touch the meat. You'll be flabberghasted how good the meat is! If it's a boar, try to find someone in town that wants 'em to make tamales...
