    High temp cheese in San Antonio?

    Anyone know where I can pick up some high temp cheese in San Antonio? Also looking for sausage casing that is in the tub with salt water not vacuum packed dry in salt.

        Pardon my ignorance, but why do you prefer the wet casings over the dry? Is it just to avoid having to soak them, or is there a difference between the two?

            I've used both and my experience has been that the wet casings were fresher. I had less blowouts, they had less tears in them and each casing seemed to be longer. I usually wait till the last minute to get my stuff together and end up having to get the dry casings because the wet is harder to find. But this year I'm planning ahead. I may just order online.

              You may try some of the Mexican meat markets for the casings.
