How long do y'all usually smoke it? Talking about a cold smoke. And what do ya do if it rains or something?

I cold smoke 3-4 days..... only during the day. The old timer who showed me let it sit overnight to "drawup". dont know if it is rite or wrong just how we do it. I usually just leave it in the smoke house unless it is warm/humid enough to make me nervous. If i take it down i just toss it in a fridge and rehang it and start over in the morning

8 hours of cold smoke then hang in front of a fan in the garage til its dry to suit me.

Last batch I did, went for 6 hours. This next batch I might try 4 and see how that works out

Smoke for an hour or so. Dry 2 weeks or use dehydrator.
