    wild hog sausage??

    Anybody make pure pork fresh sausage out off wild hog?

    I have, I have also used wild hog as the pork in my venison sausage and liked them both.

          For about the last 20 years. Same recipe as domestic hog. It's a coarse grind...salt, pepper, garlic, smoke...pretty similar to a lot of Czech recipes. We did deviate from the norm last year and use a jap/cheese recipe from Travis....turned out **** good.

              Use it to make fresh breakfast sausage as well. Have to add some fat to it

                  Made all kinds of sausage the last 10 years. Pan Sausage, smoked sausage, summer sausage, snack stix. You name it we've made. A couple of years ago we switched to a sausage blend called Zach's that we get from Allied Kenco. Hands down the best seasonings on the market imo.

                      Im venison poor this season. Thats why I asked. Guess ill try to get a hog this week and try a batch.

                          You wont regret it, but do yourself a favor,cut out the backstraps and make some cutlets.

                            Make sure it's a smaller sow and you'll be good. Had some made with a boar at it was a waste of good money had to throw it all out.
