    Duck! It's what's for dinner! W/pics and steps.

    Turned these mallards shot yesterday. Into a 5 star meal.


    First step was clean them up pretty! I always save mallard legs for a appetizer!


    Next is soak em in a brine for 24 hours.


    Next pull out the breast and legs and pat dry. Powder legs with seasoned flour, and coat the breast with SETX olive oil and season with salt and pepper.

    Chicken fry the legs in a pan. Serve as appetizer!


    Grill the duck on a hot pit medium rare. Serve with raspberry whiskey sauce over wild rice with carrots and mashed sweet potatoes!




    Wife said it's the best meal she's had in a long long time.

                            Yessir that right there is indeed a 5 star meal! Very good to not over cook just as you said! And those "duck bites" as appetizers, you just can't beat that! I noticed you left some of the skin/fat on the breasts... good move there too! sure helps with grilling, smoking, boiling for dressing/dumplings-you name it! Lot of flavor there.

                            Jus flat out mouth-watering!!
