    How long can venison sit??

    Wife shot a buck Thanksgiving day. I quartered it up and she put the tenderloins in container and in the fridge. Well, we packed up and left and I forgot to bring them with us. Just went back this weekend and got them out of the fridge. Question is, are they still good or should I toss them out or give them to the dogs? To make the story complete, she had put them in a bowl of water before she put them in the fridge. Fridge at the cabin is kept pretty cold so it was sealed up in the fridge in a bowl of water for about 10 days now.

    They are better for sitting that long! Unfortunate they sat in water that whole time though.

        I think you probably bleached the heck out of them but I don't guess they've spoiled.

        Why the water?

          I age my deer quartered in a cooler for 7-8 days before I process them at my house. Whitetail venison takes quite a while to spoil if kept cool. I would just trust my nose and as long as it doesn't smell bad it is more than likely just fine. Just my .02

              Water will help pull blood, which will help remove gamey taste. Sometimes I'll pack my meat in ice for 3-4 days. Drain water and refill with ice for another couple days.

                She put them in water so I could clean them up after I finished quartering deer (cut them out first thing). I usually soak them in water for a little while to draw some of the blood out, seems to make them a little better to me anyway. And yes, they where pretty white by the time I got them out of the water.

                  I used to think that too, but now I think soaking has ruined more meat than it has helped. You don't soak any other kind of meat in water, and the butcher doesn't either.

                    I just packed the straps and tenders from my boys buck he shot Weds before Thanksgiving. I have about 80 lbs of Italian sausage that we mixed up today from the rest of the venison and a pig he shot the same day. They sat in a cooler in the driveway packed in ice since we got home last Friday. I'm sure those tenderloins will be fine!

                      At least 28 days in a walk in cooler to dry age.

                              10 to 15 days in the fridge or cooler (with good air circulation) is perfect
