    Own processing done!

    Did my own processing yesterday, ground meat, sausage, backstrap to the family taste lol ...took me 7 hrs but i enjoyed doing it, first crack at making my own links so today ill put some to the test!

                Grinder worked out great think i pd 230 for it year but i might be wring lol

                    Did an elk ham this weekend. Got two beautiful roasts and processed the rest to make jerky. Separated the individual muscles, cleaned all the silver skin, half froze and then sliced. Man there is a lot of meat on an elk ham! Ended up with about 20 pounds of jerky strips. Way too much to smoke/dehydrate at one time. I separated it into 5 batches...made shrink wrap bags, covered the strips with marinade, put in the freezer to freeze, then sealed after they were frozen. I will just pull one bag out at a time, let them marinate for a day, and then smoke for a few hours and finish on the dehydrator.

                      Good going and congratulations! Now you'll be doing this every year from here on out! Much cheaper this route and it gives you a good feeling to take that deer from the field to the freezer all on your own. A sense of accomplishment if you will.

                              Nice, we did 40lbs of hamburger after church yesterday ourselves. Only took about 2 hours total and it was wrapped and in the freezer. Sausage will be done when its gets cold. Nice work man...
