    Mold in the smoker

    So I went out to smoke some summer sausage last night and realized that there was mold growing in my smoker. Apparently when we moved the smoker a couple of weeks ago the top vent got opened. We had a bunch of rain over the last couple of weeks that got inside.

    This is one of those vertical propane smokers.... But it does what I need.

    So what should I do? This smoker is well seasoned since we have been using it for years. I really don't want to scrub it all down, and I really didn't want to buy a new one.

    Build a hot fire and burn it out, then use a metal wire brush and scrape it off. That's what I do with my offset smoker.

      I would suggest cleaning your smoker after every 5-6 uses anyhow. Hot hot fire, scrub down with wire brush, oil her up, good to go. A lot of people think not cleaning it is "seasoning" and that is not true. Its bacteria and mold and it needs to be cleaned. My grates are cleaned nearly down to the metal and reoiled at least monthly. I buy the spray veg oil from walmart and spray down the grates after a good wire brush scrub.

        Unfortunately i would scrape and scrub it out and build a HOT fire in it for a couple of hours.

          Use a pear burner on it

            Burn it out with a flame thrower, than scrape, apply earl and burn a fire

              I have had that happen with my offset stick burner. Just it it with a grill brush (wearing appropriate respirator) and then built a really hot fire. Went away pretty quick and nobody has gotten sick. I scrape out the inside of my smoke chamber ever few briskets anyway or else the build up just gets way too thick.

                Thanks for the advice. Looks like I have a little work in front of me before I smoke something else. I did some scrubbing tonight and got a pretty good fire in it. That should stop the mold for now. I'll try and get a really good clean this weekend.
