    Burger grind questions

    I'm thawing some meat to grind tomorrow and have a couple of questions.

    1. If you're mixing 90:10 meat to beef fat ration is that by weight or size of the portion?

    2. I have deer and black buck. Would you mix them or not?

    1. A personal choice. I prefer 80/20,, but you could add some bacon also.

    2. Personally, I would keep them separate. Only acause I have not had B. B. Before.

      I would make separate batches unless you are limited on the quantity of meat.

            You can add spice when grinding, just give a small piece a taste before wrapping and freezing. We do this when making patties, also with chili.
            It might be better to taste a little BB before mixing, perhaps use it with more spice such as chili if its not the desire taste for burgers.

              100% venison only here. No need to mix in fat.

              The 80/20 bacon burgers are awesome though.

                I dont mix fat either unless i just need more meat. But if you do, its by weight.

                I would keep them separate after the blackbuck my wife shot last year, its very very good.

                  I don't mix anything with my deer.
                  If I do, it's brisket. Or wild pork. Briskets too expensive

                    I would say to separate deer and bb just to see which is better. Based on keeps comment you may wish to not taint your deer.

                    What was the issue with the bb, was it taste or tough?

                    I mix by weight and use brisket. Did pure beef fat once and it was waxey. I may have used too much fat, it q was years ago.

                            Boy I am a hunter. I live off the land. Pure venison protein is far better than that steroid injected stuff from the store.
