    Sausage making day

    I have caught up on all my projects for the the moment and business is super slow so I figured this weekend would be a good one to make a batch of sausage. I have couple of bags of deer pieces and some bags of wild pig that have been begging to be used. I decided to just grind the deer and package it for chili etc. I weighed the pork and bought fat Friday after work. Started this morning. Pics to come.

          Mixed in the spices for the link sausage and ran it through the fine plate. The meat for the breakfast sausage went back in the freezer till I was ready for it

            Loaded up the stuffer and got busy. Used natural casings till I ran out and had to finish with collagen ( you can see the darker color )

                Now that its in the smoker its time to season and mix the breakfast sausage. Decided to do a couple dozen patties and the rest in bags.

                    It wasnt the plan but ended up only smoking the ones in the natural casing. I have heard smoke doesnt penetrate collagen very well though I have never tried it. Unsmoked links packaged
