    Summer Time Sausage Making

    Had some extra time so the wife and I decided to make a few pounds of sausage. We made 5lbs of kielbasa from a hog I had shot a month or 2 ago. Had never used wild pig to make kielbasa before, but it turned out good. We also made 5lbs of poblano pepper sausage. First time we ever made that one, not bad. It has a good flavor to it, would go good with Mexican food.

      Sounds good! By coincidence I am thawing hog meat right now to make sausage tomorrow.

                Did you smoke it? I'm out of sausage and have been thinking about making some but I always cold smoke, putting it in the smoke house on a really cold night and just get it out the next morning. Not sure I can do that when its this hot outside.

                      Didn't smoke any, was afraid it was to hot. To me, smoked kielbasa is better than the plain.

                            If you're gonna smoke sausage in this heat you better use lots of cure. I wouldn't try it. OP that looks really good!
