my BIL saw the polish the 5K paper puts on with the edge pro, and was amazed. He runs a machine shop in Baytown, so he is kind of an expert on metalwork. With the 600 grit water stone, you can take an edge to where most people only dream of, and if you wish, can go a lot further. It's a little bit overkill for some knives, and it can be time consuming, but I don't think anything out there will top it. If you have high end knives, you owe it to them to use an edge pro. You can get an edge that will not only shave, but will split individual hairs.
