    Tried something new for lunch...

    Holy moly I'm hooked. I first heard of Sous Vide last night, and decided to give it a go today. I had a cheap sirloin in the freezer I needed to do something with, so if it was a flop it would not be a great loss. I let it sit in water for 3 hours at 135. I used a crock pot on warm, which worked great. Then I seared 1 minute per side. I thought I had steak cooking down pat, but I'll be doing this from now on.

              You put it in a ziplock, and submerge the bag in the hot water? I have heard of this but never any details

                Season your meat the way you would anyway, put it in a ziploc freezer bag, and put it in 135 degree water for at least an hour, but the longer you go, the more tender you will get. This gets the meat to desired temp, but it is impossible to overcook. I did 3 hours, but many do 24 hours. I did it the poor boy way and used my crock pot on "warm". That keeps the water temp in the 130's. After that, get grill or pan scorching hot and sear both sides 1 minute each. This is a French method of cooking.
