Grilled some Paddle fish this past weekend at the lease. I spiced it up and grilled it. Worst fish I've ever put in my mouth. I've cooked a lot of fish in my lifetime and by far it was the worst. Anyone have a good recipe for it? FYI it was not caught in Texas.

I ate alot of it growing up. Snagging is legal in Arkansas and and you are allowed to keep paddlefish. Prepared right it taste good and if not it taste like nasty rubber (hard to explain).
Did you ring the tail, and pull out the cartilage? I have always been told, that is what causes the nasty taste
Soak it in mustard for a couple days, and fry it up. You won't complain.

Salt, cornmeal and grease. Smaller ones to 12-15 lbs are the best eating.
