    Who has tried paddle fish

Grilled some Paddle fish this past weekend at the lease. I spiced it up and grilled it. Worst fish I've ever put in my mouth. I've cooked a lot of fish in my lifetime and by far it was the worst. Anyone have a good recipe for it? FYI it was not caught in Texas.

Never tried it or will I now
Too bad peaches are not in season. You could break a pit and get to the small seed inside. Just put it on your tongue for a minute and you would not taste the paddlefish anymore.

I hate it. A lot of folks here in Kansas like it.

Did you trim off the red meat that wraps all around the white meat? I breaded some in corn meal and seasoned salt and pan fried it. Tasted great. Not sure why yours wouldn't taste good.

Paddle fish falls in the same category as shark. Is it edible? Yes. Would you rather it over crappy or speckled trout? Not in a million years.

Strange, I have always found that protected species are some of the most tasty. :-)

I ate alot of it growing up. Snagging is legal in Arkansas and and you are allowed to keep paddlefish. Prepared right it taste good and if not it taste like nasty rubber (hard to explain).
Did you ring the tail, and pull out the cartilage? I have always been told, that is what causes the nasty taste
Soak it in mustard for a couple days, and fry it up. You won't complain.

Them shovel bill cats are pretty good if cleaned while still alive. Hang em by the bill and cut the tail off so they bleed out. Skin and take out any red meat and backbone.
Salt, cornmeal and grease. Smaller ones to 12-15 lbs are the best eating.
                          No bones.

When I was working in Oklahoma, they had a snagging season. I snagged one and cooked it. The meat just looks terrible. It was by far the worst fish I've ever tasted.

Kind of like duck. If I have to work that hard to make it edible I will let someone else "enjoy" it.
