    How long, axis backstrap?

    I'm going to smoke an axis backstrap. Gonna cut it in two because smaller diameter side will cook quicker. Gonna spray with apple juice, put my rub on it, and wrap in bacon. Probably smoke at 215-220 degrees. About how long do you think I need to smoke? Thinking 1.5-2 hours.

      Just until it's around 130 degrees internal

        go to Amazon and buy the Maverick ET 732 ... temp probe works off wi-fi with 2 LCD units as the alarm will beep when desired temp achieved

        basically sit inside AC , watch TV, and occasionally view LCD screen to monitor meat and pit temps

                  Don't smoke on time. Go by temp.

                      x 2 ... what they said .... to many variables to give an exact time or WAG

                      buy a meat temp probe and it will totally change how you cook , and your meat will taste better since your cooking for temp , not time
