    Traeger brisket?

    Picked up a Traeger pellet smoker yesterday. Put my first brisket on last night. I have always used an offset stick burner before. I left it on the smoke setting for the first 5 hours and then turned it up to 250. 7 hours in now. Does not look like it is getting the dark bark on the outside I am used to. Any advice from guys that have used a pellet smoker before? Thanks.

      It probably won't get the bark a stick burner makes. I bet it tastes just as good.

        Don't expect a bark like you get with your stick burner. I have a propane smoker and even though I don't get the bark the briskets still taste great.

          We will see how it turns out. The pellet smoker sure makes life easier as I don't have to spend the entire day tending a fire.

            Did you wrap after 5 hrs and what was your internal temp when you cut off the smoke?

              I wrapped it when the flat hit 165. Cooking at 250 now. Internal temp is at 176 now. Gonna pull it around 195 and let rest in a cooler for an hour.

                Never had any luck with brisket on my traeger. Pork is a different story.

                    Brisket turned out every bit as good as when I used a stick burner. It might even be better and I didn't have to tend the fire for 12 hours.

                          Love my Traeger. A true Set it and Forget it smoker. I have a wireless thermo that was a deal on here one time, and i set it up wherever i am in the house. So easy and great smoke rings and flavors!
