I've killed only one javelina. I was taught to eat what I kill. It was a boar and I could not get through it. It was awful and tasted like it smelled. I'm going on a hunt for hogs and javelina April 21 and just wanna know if maybe a sow is any better? I did everything that I was told. Don't touch the meat with the hide. Use another knife to quarter it. Don't hit the gland and the crap was unbelievably bad. I hate to kill one and just dump it. In fact it is considered a game animal and legally I must keep the quarters and backstrap in edible conditition from what I read.

I've had really good and really bad, you weren't mis-guided on being very careful when you clean one, it's easier to case skin them (like skinning a coon) to keep it clean but even then, stuff happens. On the bright side rules say to keep the edible parts, doesn't say you have to eat it, after all aren't dogs people too.

I've only tried one which was a 47lb boar my son shot last November at the Chapp. We've only had grilled tenderloins so far and they were excellent. I plan to do tamales with the front shoulders and smoke and pull the hams. The back straps will be grilled. I think they taste great. That javi went from walking around to skinned and in the walk-in in less than 45 minutes. The gland is not a problem. It comes right off with the skin.

Hereis the best javi recipe I know of:
1. Carefully skin javi, taking extra caution not to cut thru the gland.
2. Lay javi out flat on a piece of plywood.
3. Use a 2x4 to beat the crap, ooh, I mean tenderize the javi. Bring a lunch because this step may take a while!
4. Throw away the javi, and eat the 2x4!!!!
