We tried to do that with a bunch of dove breast from a border shoot down in the RGV and because some of the water in the bags of breast melted, it was over the minimum liquid oz. requirements to get it on the plane. We had to forfeit a bunch of dove meat that I'm sure the SW workers in Harlingen enjoyed.

I have no experience with United but I have checked meat on airlines many times. No real issue. A couple of tips:
Bone you meat and seal in large zip lock bags
Freeze the bags hard
Place zip locks in a big trash bag are tie it tight
Duck tap the cooler close.
You should have no issues.
I actually brought on the plane in my big backpack almost a whole antelope. The TSA guys were kinda freaked out.

They just charge for an extra checked bag. It was $100 from New Zealand to Austin.

This just puts NZ back to the top of the list.

From United's web page:
"Perishable items must not violate agricultural rules for the destination country. Perishable items may be packed in hard-sided ventilated containers with a maximum of 5.5 pounds (2.5 kg) of dry ice. United will not accept perishable items packed in Styrofoam coolers or in containers that include wet ice."

I packed my clothes with the cooler. If you blow the weight or the number of bags its starts getting really expensive.
I didnt worry about dry ice or anything like that.
