    brine turkey or soak in milk?

    I'm wanting to make some deep fried turkey strips. Has anyone had success with brining wild turkey before frying? I have found a lot of recipes that recommend milk but I normally brine ducks. Anyone tried both and have a preference? Thanks

    I would brine. The lean meat will really benefit from it.

        I've always brined mine, but they are really good when you fry after brining using buttermilk and flour as opposed to a milk/egg batter.

          We soak ours for about an hour in milk before we fry them, then my wife seasons them and then batters. They are even better the second day if there's any left.

            We did a brine on our bird back at Thanksgiving. Hands down the best bird I've ever eaten. And I've eaten a lot of birds....

                I've never brined a wild turkey, and all were wonderful. Might try and brine the next, just to see. Brine won't help the drumsticks, you cans soak the tendons out

                  For frying fowl soak in buttermilk

                      I do this with wild turkey

                      I tenderize a Breast out and I layer it with jalapeƱos cream cheese and jalapeƱos. I then role it up and rap in bacon. I bake it for 2.3-3 hours @350. You can use other cream cheese as well.
